Tatume (Cucurbita pepo) is a vining plant that is a popular staple in Southwestern and Mexican cooking. Its fruit can be harvested and eaten young (at about 45 days). These fruits are usually picked when they are small and eaten/cooked like a zucchini would be. Harvest the green, round fruits when they are about the size of a baseball. They are typically round in shape but they can range to large ovals as well. They are unusually firm and have a fine flavor.
